Petillant Naturel (Méthode Ancestrale): This charmingly rustic method involves bottling wine before fermentation is complete, resulting in a lightly fizzy and slightly cloudy wine. It's a snapshot of the fermentation process and showcases the unfiltered, raw essence of the grape. Check out the amazing pet nat’s from our good mates Konpira Maru. Working from their beautiful site high up in the Whitlands Plateau above the King Valley, they produce interesting blends and importantly, disgorge their pet nats so they are not so cloudy and explosive.

Méthode Traditionelle: This classic method involves a secondary fermentation in the bottle, yielding complex flavours and fine bubbles. It's the method used in producing Champagne and many high-quality sparkling wines.

Prosecco: Hailing from Italy, Prosecco is known for its bright fruitiness and gentle bubbles. Made using the Charmat method, it offers a refreshing and approachable sparkling option. The King Valley is known as prosecco country in Victoria, with many Italian immigrants planting the variety after having to pull out their tobacco plantations.
